4.8 GRILLED SHRIMP AND VEGETABLE SKEWERS

Ingredients:

»   100g peeled shrimp

»  1/2 red bell pepper, diced

»  1/2 red onion, diced

»  1 zucchini, sliced

»  1 tablespoon olive oil

»  Lemon juice

»  Salt and pepper

Instructions:

1. Thread the peeled shrimp, pieces of bell pepper, onion, and zucchini onto alternating skewers.

2. Brush the skewers with olive oil and season with lemon juice, salt, and pepper.

3. Grill the skewers on a preheated grill for about 3-4 minutes per side or until the shrimp are pink and the vegetables are tender.

4. Serve the skewers hot with a light yogurt and lemon sauce.
